A SPECIAL FISH DISH
Years ago, whenever I attended a special event like an engagement party or a shower at a function hall, the dish that was usually served was baked haddock. No matter how many times this dish was served at these events, it was always a big hit.


One time I asked for the recipe and the owner of the function hall was kind enough to give me the recipe.

It's not my usual "Nice and Easy" recipe but it is worth the effort.

Millie's Baked Fish with Vegetables

6 pieces of haddock or cod
1 large onion, diced
2 stalks celery, diced
1 small green pepper, diced
1/4 pound fresh mushrooms
3 tablespoons butter
8 ounces tomatoe sauce
salt and pepper to taste

Lighly grease a baking dish.

Brown vegetables in 2 tablespoons of butter. Place vegetables on bottom of baking dish. Place fish on top of vegetables. Dot with remaining butter. Season fish with salt and pepper. Pour tomatoe sauce over fish.

Bake in 400 degree oven for 35 minutes. Baste occasionally.

Hi Millie, I forgot this recipe and now I'll try it again. It is super delicious. Do you have a favorite tomato sauce? I think I used tomato soup not diluted.

To make that recipe even easier to make - you could buy a bag of frozen vegetables containing onions, peppers and mushrooms. You wouldn't even have to dice the vegetables.

I make that dish with whatever I happen to have on hand, either a can of tomato sauce or tomato soup. Either one should work well.

Now that you mention it, I think my mother used tomato soup, it could be milder.
 
I haven't had haddock for years. Thanks for reminding me and I will try the recipe. Sounds good.

Your previous post was wonderful too. I'm not sure if younger folks appreciate the details the way I do but I'm always delighted by your uniquely wry way of spinning a yarn from yesteryear!

Due to my creeping infirmity (only physical one would hope) I've missed you. As suggested I'm looking into voice recognition for my computer. It's just too frustrating to be so out of touch. I've heard the system has really been improved so I look forward to giving it a whirl.
 
I haven't been cooking much for awhile, but this recipe looks good enough to eat. Will have to give it a try. Fish is a favorite of mine, including sushi. Thanks.
